Peruvian BBQ Salsa

This salsa is spicy, tangy and delicious with basically any BBQ food. It goes particularly well with Anticuchos (a style of BBQ skewers using beef heart). Going back to the time of the Incas it has been made using Llama meat, however it is now commonly made with beef heart.

Ingredients

  • juice of 4 limes
  • 1 small red onion, finely chopped
  • 1/2 bunch coriander, washed and roughly chopped
  • 1 Tbsp Martha's Peruvian Chilli (add more or less to get the right amount of heat)
  • 1 tsp salt

Method

  1. Mix all ingredients together and adjust the salt to balance the acidity of the limes
  2. Serve with your preferred BBQ food immediately and enjoy!

This salsa uses Martha's Peruvian Chilli as the core ingredient for the spice and flavour of the chilli. You can use however much you like to get the heat right for your taste. This recipe makes enough for about 6 people.

Peruvian Chilli Mayo

This chilli mayo is truely moreish, and fantastic with anything piping hot and cruncy (I'm looking at you chips and wedges!). You couldn't ask for a simpler way to make a delicious chilli mayo!

Ingredients

  • 1 Tbsp Martha's Peruvian Chilli
  • 4 Tbsp Mayonnaise (use your favourite - we find Japanese-style mayo works well)

Method

  1. Mix all ingredients together and adjust the amount of chilli to your taste
  2. Serve with your dipping food, e.g. chips, wedges, fried yuca,tequeños, crackers etc. and enjoy!

Peruvian Chilli Dumpling Sauce

A delicious dumpling sauce with a spicy hit to complement the sweet and salty flavours. Wonderful with either steamed or fried dumplings, or even mix a spoonful into your wonton soup - it will give it a lift and a kick!

Ingredients

  • 1 Tbsp Martha's Peruvian Chilli
  • 1 Tbsp Kecap Manis
  • 2 tsp Soy Sauce
  • 2 tsp Oyster Sauce
  • 1/2 tsp Sesame Oil

Method

  1. Mix all ingredients together and adjust the amount of chilli to your taste
  2. Serve with your food, e.g. dumplings, asian-style vegetables and enjoy!
